Recipes - Fifth Session 

Cooks watching the demonstration and having a go at making the recipes
Fairy Cakes -
Makes about 12 small or 6 large
Ingredients:
- 125g mono or polyunsaturated margarine
- 125g caster sugar
- 125g self raising flour
- 2 eggs
- 2 drops of vanilla extract
- 50g dried fruit or 75g berries e.g. sultanas, raisins, raspberries,
blueberries
Method:
Preheat oven to 200oC/Gas Mark 6.
Combine all ingredients except fruit and mix together using hand whisk or food
mixer/processor.
Fold in fruit.
Divide between cake cases and bake for 15-20 minutes.

Joe’s Basic Tasty Napoli Sauce
To be used on your pizza base or as a basic tomato pasta sauce. Use it for
everything.
Ingredients:
- 3 tins whole tomatoes / chopped tomatoes
- ˝ onion finely chopped
- 1 tbsp of olive oil
- 2 cloves of garlic crushed
- Pinch of oregano
- Black pepper to taste
Method:
Sweat the onions in the olive oil until soft – do not brown.
Add the crushed garlic once the onions are soft and stir.
Add all the tomatoes and bring to the boil.
Simmer for 30 minutes.
Place ingredients through the blender and use on your pizza (or on your pasta).
Tips:
This basic napoli sauce can be used for many different recipes such as a
sauce for pasta, ratatouille, in your shepherds pie and lasagne.
