Traffic Light Kebabs
Please note these are estimates and will vary with seasons and preferences in
your group. Also, the lists are not exhaustive - try other fruit and vegetables
out and see how they work. Choose fruits and vegetables that are in season where
possible as these will be when they are at their tastiest and probably will also
be the best value for money.
Ingredients:
- Red
- 1 red pepper
- 1 punnet strawberries
- 1 punnet cherry tomatoes - halved
- Orange
- 2 oranges/satsumas segmented
- 1 punnet physalis/cape gooseberries
- 1 orange pepper
- ½ pineapple fresh or tinned in juice
- 1 tin apricot halves in juice
- Green
- 1 cucumber
- 1 apple cut into 1 inch/2cm chunks (to avoid browning toss the apple chunks in
lemon juice if not to be used immediately)
- 1 green pepper
- Cocktail sticks/wooden kebab skewers
Safety Note:
Children must be supervised closely at all times when holding
sticks and may need assistance to thread on the fruits and vegetables.
Method:
Chop fruit and vegetables into 2cm/1inch chunks
Put each different food into its own container and then group the colours
together
Allow the children to choose 2 options from each of the colour groups and then
thread them on to one kebab skewer or 2 cocktail sticks in the red, amber, green
order
If children are reluctant to choose from one or more of the colour groups
encourage them as much as possible by allowing them to smell, touch and taste
the different choices.

Fruit Smoothies -
Serves 6
Ingredients:
- ½ pack of frozen forest fruits (thawed)
- 225g/9oz canned pears in juice
- 500ml apple juice
Method:
Blend the fruit and juice in a blender or food processor
Add additional juice if the consistency is too thick.

Crunchy Topped Fruit Delight -
Serves 6
Ingredients:
- 50g/2oz apricots (fresh or tinned)
- 50g/2oz peaches
- 50g/2oz grapes
- 50g/2oz raspberries
- 50g/2oz strawberries
- 1 small banana
- 1 small pot fromage frais/thick greek yoghurt
- 25g/1oz soft brown sugar
Method:
Skin the peaches and apricots and remove the stones. Skin the banana
Slice the fruit and halve the grapes and arrange in a bowl with the berries
Pour the fromage frais/greek yogurt over the fruit and sprinkle the sugar on the
top
Place under a hot grill to melt the sugar and until the top becomes golden.
